Pumpkin Protein Brownies with Date Caramel
(With Grass Fed Beef Protein Blend)
Pumpkin Protein Brownies Ingredients
• 1 cup pumpkin purée
• 1/2 cup almond butter
• 1/3 cup maple syrup
• 1 egg
• 1/4 tsp salt
• 1/2 cup chocolate chips
• 5 scoops Kono Nutrition Raw Chocolate Grass Fed Beef Protein Blend
Pumpkin Date Caramel Ingredients
• 1 cup medjool dates, pitted and softened
• 1/4 cup pumpkin purée
• 1/2 cup canned coconut milk
• 1/2 tsp vanilla extract
• 1/2 tsp cinnamon
• 1/4 tsp sea salt
Directions

Pit and soak dates in boiling water to soften.

Preheat the oven to 350F and prepare a square baking dish with oil or parchment paper.

In a large mixing bowl, combine pumpkin purée, almond butter, maple syrup and egg. Whisk until everything is combined.

Add in Kono Nutrition Protein blend and salt. Stir again.

Fold in chocolate chips.

Transfer the brownie batter to your prepared baking dish.

Bake for around 20 minutes or until brownies have set.

While the brownies bake, make the pumpkin date caramel in a food processor or blender.

Add everything and blend until it's creamy and mostly smooth. You can add more coconut milk or water to thin.

Transfer the caramel to the fridge until you’re ready to use it.

Let the brownies cool in the pan and then transfer to a wire rack or cutting board.

Spread pumpkin date caramel evenly over the brownies.

Cut into squares and enjoy!
